You will find two types of truffle oil in quality supermarkets and specialty shops. Black, and White. Easy, right?
I suppose that leaves us to discuss when and how to use each one. They look similar, and are equally wonderful. They are not always used in the same ways, though.
Black Truffles
Oh, I'm sorry. What are truffles you ask? They are a mysterious, incredibly flavorful, extremely expensive, and naturally yummy fungus that you must experience. No, not the chocolates that you get at Godiva, though they are called truffles, too (and they're also expensive). The chocolate ones are naturally impersonating the real deal.

My beloved is black truffle oil, so we'll start with that.
Black Truffle Oil
This oil is very strong in flavor and smell. It's so pungent that you only need a very small drizzle. The bottle dispenses in drops, if that's any indication of how strong it is. Don't let it intimidate you! Black truffle oil is breathtaking on anything savory, meaty, earthy, or starchy. Think stews, dark leafy greens, potatoes, gamey meats. The oil tastes like the woods and the earth, so it works very well with anything rustic and hearty. You could sautee some spinach in butter and oil, and drizzle black truffle oil on top. Place a few spinach and cheese ravioli on top, and you have an awesome meal. You could make something as uncomplicated as a hamburger, and put a few drops of oil with imported swiss cheese on top. Put it on a toasted sesame bun, and it would be fantastic. Get yourself a bottle, smell it, taste it, and see what it reminds you of. It's pretty awesome.

You can see the pieces of black truffle inside. They undoubtedly make a difference. Check the ingredients list and see what you're buying. It's worth a few extra dollars.
White Truffle Oil
This is the delicate counterpart of black truffle oil. Perhaps slightly more refined. Also a wee more difficult to find in supermarkets. You might want to look online.
White truffle oil goes very well with foods such as eggs, breads, rices/risotto, light pasta dishes, cheeses, and even deli meats. I would reveal white truffle oil as slightly peppery and crisp. It would be great on an arugula salad with some grilled chicken. You could put some lemon zest on top. Sounds good to me.
Have you ever been to Tria in Philadelphia? improbable good! Wine, cheese, great snacks, naturally amazing. They have one dish that I love. No idea what it's called, but here's how I would recreate it. Buy: challah, white truffle oil, small eggs, good salty butter. Do this: Cut a slice of challah, butter both sides. Heat a frying pan over medium low, and put the bread in the pan to toast the lowest side. Just let it get slightly golden, and then flip it over. Put a drizzle of white truffle oil on the golden top, and thought about crack one egg on top. Put a lip in the pan over the bread/egg, and keep it covered for about five minutes over very low heat. Check to see if the white is cooked, but leave the yolk soft. I bet it would be delicious.
